How do you breathe new life into a local institution? If you’re Lino Pertusini, you find a compatriot from the same Lake Como region of Italy, and put him at the helm of Osteria D’Assisi. Introducing executive chef Cristian Pontiggia, recently immigrated (by way of Taos) to Santa Fe. He throws a mean pizza dough (literally), has chef-worthy ink, and is producing some stunning classic italian plates.
