The way I see it, I never actually, really, truly tasted a real chicken until I moved to Santa Fe and discovered Pollo Real at the Farmer’s Market. Tom and Tracy raise a french heritage breed called Label Rouge, and the flavor leaves me speechless. Wordless. After reading Michael Pollan’s “Omnivore’s Dilemma”, and learning about the kind of sustainable poultry farming that Pollo Real represents, going to their farm in Socorro felt a little like a pilgrimage. I wanted to see where my favorite poultry was actually raised. Especially for thanksgiving. This is one of the reasons I love living in Santa Fe – getting to see meet the people and see the land where the food I so enjoy comes from.
